Apple Cream Scones



I have been making these scones for years. I really like Them. The original recipe calls for some coffee. Since I don't drink it I omit it and add a little more cream to the dry ingredients. It can be eaten plain or with whipped cream or clotted cream  piled on top. It is so delicious with a cup of hot rooibos.

Apple cream scones
Ingredients
2 cups chopped tart apples such as Granny Smith (I use Gala)
6Tbsp Butter
1/2cup+1tsp whipping cream
2 1/4 cups all purpose flour
1/3 cup sugar
1Tbsp baking powder
1/4 tsp salt
2 Tbsp coarse sugar

Preheat oven for 400 F




Cook apple in 2 tablespoons of butter till tender and liquid is almost evaporated. Let cool.




 Mix Flour, sugar,baking powder and salt.






 Cut in remaining butter (4 tablespoons) till pieces resemble coarse crumbs.




Add apple.





Then add cream. Stir till dough clings together. Don't over work the dough.









Pour the dough on a lightly floured surface, pat the dough about 1 inch thick.Use a 2 inch cutter to cut the dough. The scrap can be gathered and cut again.  

(The dough can also be pat to make an approximate 8 inch round and cut into pie shape)




Brush top with cream and sprinkle with coarse sugar.

Bake about 20-25 minutes. This makes about 12 scones.

Whenever I have a tea party these Apple scones are always on the menu. They have  just the right sweetness and are tender with a little bit of crunch on the top.They go so well with Rooibos. 

Rooibos is a very popular drink in South Africa. It derives from a native bush-red or green. It is caffeine free and has a very high anti oxidant  property. It can be drunk hot or cold. I do like mine hot with a little bit of milk or cream and either honey or pure maple syrup.
